Ingredients:
- 1 medium butternut squash
- 3 medium carrots
- 2 Macintosh apples (peeled)
- 1/2 a yellow onion
- Fresh ginger (to taste - adjust to your preference)
- 2 cloves of garlic
- 1 can full-fat coconut milk
- 4 cups of chicken or vegetable broth
- 1/2 tsp cayenne pepper
- 1/2 tsp cinnamon powder
- Salt (to taste)
Directions:
1. Preheat the oven to 400 degrees.
2. Start by peeling and chopping the butternut squash and carrots. Place them on a baking sheet and roast until they are soft, around 35-40 minutes.
3. While the vegetables are roasting, peel and chop the yellow onion and apples. Roast them on a separate baking sheet for about 20-25 minutes. This roasting process will intensify their flavours and add a lovely depth to your soup.
4. In a large pot, heat some extra virgin olive oil (evoo). Add the minced garlic and freshly grated ginger. Sauté them until they become soft and aromatic, infusing your soup base with incredible flavours.
5. Pour in the chicken or vegetable broth, the can of full-fat coconut milk, cayenne pepper, and cinnamon powder. Stir well to combine the ingredients, creating a creamy, aromatic base for your soup.
6. Once the butternut squash, carrots, onion, and apples have been roasted to perfection, add them to the pot. Cook for about 5 minutes, allowing all the ingredients to meld together beautifully.
7. Now, bring the pot to a boil and then reduce the heat to a simmer. Let it gently simmer for about 10 minutes, or until all the vegetables become soft.
8. Once your soup has simmered, it's time to blend it. You can use an immersion blender or a Vitamix for this step. Blend until your soup is velvety and smooth, with no lumps remaining.
9. Taste your soup and season it with salt to your liking. Adjust the ginger or spices if you prefer a stronger or milder flavour.
