Grain Free Almond Pistachio Matcha Cookies

Recipe:


Dry Ingredients

1.5 cups almond meal/flour 1/2 cup tapioca/cassava flour or arrowroot flour 1-2 tbsp Matcha powder 2 scoops Organika Enhanced Collagen (optional) 1/2 tsp baking soda 1/2 tsp baking powder tsp salt

Wet Ingredients

2 eggs 2/3 cup cashew butter 2/3 cup maple syrup 2 tsp almond extract (key ingredient) 2 tsp vanilla extract

Add wet ingredients to the dry ingredients and add in the following; 1/2 cup or more chopped roasted pistachio Chopped dark chocolate chunks Top each cookie with some sea salt

Spoon out individual rounds of batter onto a cookie sheet with parchment paper, pressed down each cookie slightly with a fork. Bake at 350 degrees for 15 minutes.


Allow cookies to cool and enjoy with your favorite dairy free milk!
